Snack Mix
1-1/2 cup Rice Chex
1-1/2 cup Corn Chex
2 cups thin pretzel sticks, broken in half
1 cup salted peanuts
1/2 cup cashews
1-1/4 pounds white melting chocolate
Combine Chex mixes, pretzels, peanuts, and cashews in a large bowl. Melt the white chocolate in a microwave-safe bowl. Melt until completely melted, but do not burn. Stir until smooth. Pour the melted chocolate over the mixture. Gently stir/fold until everything in the bowl is covered. Using a tablespoon, scoop spoonfuls of he mixture onto wax paper about 2 inches apart. Let cool until the chocolate hardens. Makes approximately 50 snacks.
